Are you hungry yet?? Well you should be! Here's what you need for this dish:
1 Small bag of small shrimp (thawed)
2 heads of fresh broccoli
About 3/4 cup of Mayo (I know, I know. I'm usually a Miracle Whip girl. But we used the Mayo with olive oil which has less fat and calories than regular mayo)
And oh, probably about 2 tbsp of sugar
Here's what you do!
1-Wash and chop the broccoli
2-Toss the broccoli in a skillet with some olive oil and a little water, turn heat on medium and cover. Cook for a few minutes, until the broccoli gets a bit tender
3-Add the shrimp! Stir frequently and keep a CLOSE eye on it! If you've never had over-cooked shrimp....well keep it that way!
4-When the shrimp is basically done, add the mayo and stir well, then repeat with the sugar.
5-Stir it a bit more and make sure your shrimp is done!
6-Eat it!
As I said before, you can eat it like this (which is what we did) as a side dish, but you could put it ontop of sticky rice or with some pasta and make a meal. It's great!!!
